Spicy Soup To Save In Case You Get Snowed In

Depending on where you live, there could be a chance of experiencing a huge blizzard this year. Last year, many Americans spent their winter days stuck indoors with little to do but watch TV and drink hot beverages. When you're snowed in, it's hard to do the cooking. If you don't have all the ingredients you need, you can't just pop over to the store to pick them up. So this year, plan ahead by making some delicious meals in advance. Spicy Meatball Soup
Here's a recipe that's sure to warm you up on the coldest winter day. Not only will a nice hot soup make you feel better about not being able to go outside, the spicy flavor will trick you into thinking you're somewhere south of the border.


  • 1/4 cup fresh cilantro, chopped
  • 1 1/2 pounds ground beef
  • 1/2 teaspoon cinnamon, ground
  • 1/4 cup fresh mint, chopped
  • 1/3 cup white rice, uncooked
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 1 zucchini, sliced thinly
  • 6 cups chicken broth
  • 2 cups water
  • 15 ounces tomato sauce.

1. In a mixing bowl, combine the cilantro, beef, cinnamon, mint, rice, egg and salt and pepper. When it forms a paste-like consistency, use a tablespoon to form meatballs.
2. Then, in a hot pan, place the oil and onion and cook for three minutes or until the onion turns transparent.
3. Next, add the meatballs, zucchini, broth, water and tomato sauce. Simmer for 30 minutes, then remove from heat.
4. Let the soup and meatballs cool completely, then pour them into a bag and seal them up. Put in the freezer and reheat it when you're stuck indoors because of inclement weather
